Greek Oregano Chicken

  • 1 chicken - cut up
  • 2 tsp salt
  • ½ tsp freshly ground pepper
  • 4 Tbs melted butter
  • 4 cloves garlic, crushed
  • ½ cup olive oil
  • ¼ cup lemon juice
  • 1 tsp oregano
Mix olive oil, lemon juice, melted butter, salt, oregano, and pepper in bowl.

Marinate chicken at least one hour.

Grill over indirect heat, brush on marinade while cooking.  (Tip:  Don't be too afraid to let this chicken sit directly over the flame or coals for part of the cooking time!  This will cause the grill to flare up and chicken skin will burn a bit, but were pretty sure you'll enjoy the enhanced flavor of this blackening process.  After the chicken is blackened to taste, lower the grill hood and allow the smoke to extinguish the flames.  Depending on the heat of grill, you may wish to move the chicken to indirect heat at this point.)

This tangy marinade flavors the chicken meat as well as the skin.   Excellent served with Bulgar pilaf or rice.

Cola-Can Chicken

  • 2-4 Servings
  • Prep time: 20 minutes
  • Grill time: 1 hour, 15 minutes
  • 2 TBS Barbecue Rub, divided
  • 1 whole chicken (3 ½ to 4 pounds)
  • 3 TBS vegetable oil
  • 1 can cola (12 oz)
  • Cola Barbecue Sauce (see recipe below)

Sprinkle 1 teaspoon Barbecue Rub inside body cavity and ½ teaspoon inside neck cavity of chicken.

Rub oil over skin. Sprinkle with 1 tablespoon Barbecue Rub and rub over skin.

Pour out half of cola (about ¾ cup), and reserve for Cola Barbecue Sauce, leaving remaining cola in can. Make 2 additional holes in top of can. Spoon remaining 1 ½ teaspoons rub into cola can. Cola will start to foam.

Place Chicken upright onto the cola can, fitting can into cavity. Pull legs forward to form a tripod, allowing chicken to stand upright.

Prepare a fire by piling charcoal on one side of grill, leaving other side empty. (For gas grills, light only one side.) Place a drip pan on unlit side, and place food grate on grill. Place chicken upright over drip pan. Grill covered with grill lid, 1 hour and 15 minutes or until golden and a meat thermometer registers 180° .

Remove chicken from grill and let stand 5 minutes; carefully remove can. Serve with Cola Barbecue Sauce.

COLA BARBECUE SAUCE

  • 1 TBS butter
  • ½ small onion minced
  • 1 TBS minced ginger
  • 1 garlic clove
  • ¾ cup reserved cola
  • ¾ cup ketchup
  • ½ tsp grated lemon rind
  • 2 TBS lemon juice
  • 2 TBS Worcestershire sauce
  • 2 TBS steak sauce
  • ½ tsp liquid smoke
  • ½ tsp pepper
  • Salt to taste

Melt butter in a heavy sauce pan. Add onion, ginger, and garlic and saute for 3 to 4 minutes or until tender.

Stir in Cola and then bring the mixture to a boil. Stir in remaining ingredients and bring back to a boil. Reduce heat and simmer for 10 minutes.

BARBECUE RUB

  • 1 TBS mild chili powder
  • 2 tsp salt
  • 2 tsp light brown sugar
  • 1 tsp pepper
  • 1 tsp Ground cumin
  • ½ tsp garlic powder
  • ¼ tsp ground red pepper

Combine all ingredients.
